    & get salt well in

    around them

    Sugar Brine with addition

    of 1 oz of Spice & add Spice

    to rolls of meat prior to 

    cooking -

    412 SALT 12 OZ Sugar 1 Teaspoonful Saltpetre

    to every 3 gls water.

    Use salt & sugar in preparation

    until a spud or egg floats

    thereon. This can be used

    for brine pump & so emerse

    To make mutton hams the 

    above pumped thro the veins

    & arteries until shows on

    surface place in brine

    24 hrs, remove allow to

    drain rub salt into exposed

    flesh & hang in smoke

    wrap in cheese cloth &

    pack in rice or wheat hulls

    & get a few more ready -

    Common Brine

    -Boiled-

    Add salt to water till

    it will float an egg.

    Bring to boil & while

    still Boiling add meat

    & broil for 5 minutes. with

    meat well below surface

    hang in cool place &

    use as required.

    5 gals water, ½ tspn S.Petre, salt enough to float

    spud. Boil 20 min, strain into crock or wooden

    vessel. Dissolve and add to brine 1 tin treacle

    4 oz Rawleighs spice, 4 oz allspice.

    Immerse fillets in brine for approx. 4 hrs

    hang and drain till sticky, then put in

    smoke box till golden brown. Pain with salad

    oil, wrap in cellophane and store.

    Will keep for at least 1 year.
