Easy white rice either steamed or

boiled, must be in grains.

Pound fresh chillies, with few chopped ∧Leeks

onions.  Fry in butter ∧or oil with chopped

ham ^& Liver or bacon ∧or pork etc add in small pieces

of crisp potato (raw) in chips, when

done add the rice to the boiling butter mixture.

(Use plenty butter ∧or oil so not dry mixture)

Mix well, adding salt, pepper {ketchup, maggi sce}

It is imperative to use duck egg

omelette & placed on top, in strips.

Fried onions are also added on top.

Ham & eggs are served separately.?

{lemon juice later) fried in butter

{or oil. (Grind peanuts also if are

OX Tongue

Take 1 or 2 OX tongues. Half

boil them whole.  Then cut in

slices, rather thick, & rub in well

salt & pepper.  Then fry slices

in olive or salad oil, with sliced

large onions.  Take 1 cabbage, half

boil or steam it in little water,

then fry the sliced cabbage in

butter or oil.  Serve with thick

gravy from the Tongues, touch of

maggi sce.

Eat OX or {Calves ∧Pigs is best Liver i/e Lambs Fry

whole.

Soon as poss, after reaching Aust:-

Schnapper fried in Oil, with Sauce

Remoulade, Chip potatoes (fried lightly

boil the potatoes) fried together with

few onions in oil, or margarine

Important as fried Schnapper may

be rather dry, pour over it when

done hot melted butter with chopped

parsley. mixes well with the

Remoulade too.

Salmon Rissoles:- Mix in ∧some chopped onions

& Anchovy sauce curry paste (few drops), &

make a gravy of oil∧etc & Anchovy Sce

to serve with the rissoles.  After frying

they shd be served with melted hot

butter & chopped parsley.  1 or 2  mashed

tomatoes shd be mixed in before

frying, same Time as salt & pepper.

Serve steamed cabbage separately.

Use liquid from salmon tin for

mixing, also oil.

*Curry Powder with oil & onions chopped or butter

A fine Dish en Casserole:- Fill bottom

of Casserole Dish with layer of boiled rice

saffroned, about 3" thick; cover rice with

slices of lightly fried Schnapper in oil or

butter; Cover this with rich layer of

[*Curry Sauce spiced with onions, salt pepper, oil &

& ground chillies which prepared separately.  Casserole bake

the whole until fish cooked through.*]

 

 

 

Note:- The rice must be boiled

till very rather dry.  Vary with

Tinned Salmon (xx) i/e Schnapper.

Pack the rice down rather hard.

fine sauce for it:- Grate finely

by using Bouillon from the Beef

(liquid), pepper, salt, etc, & perhaps

flour, or milk to thicken, or little

oil heating∧& boiling all in frying pan Pot.

big improvmt. Note:- Remoulade

Sce (cold) also with Corned Beef.

STEMPOT (Good)  Omit nothing

Ingredients (for abt 4 persons):-

2½ lbs Shoulder Lamb (Veroy)

1¼ cup flour

1 Teaspoon Salt

¼   "      ""     Pepper *Green Peas

3 or 4 Tablespoons oil or Lard[[?]]

8 large Tomatoes sliced ripe

1 cup sliced Carrots

3 medium Onions}
or larger sliced}

2½ cups diced Potatoes

Water [[?]] Large Tin ↨

Cut meat into

1 inch cubes.

Mix flour salt

& pepper.

Dredge meat with

flour mixture &

fry in oil until

browned all sides.

Add tomatoes &

simmer 1 hour.

Add ∧Peas carrots onions

with potatoes & enough minimum

water to cover.  Simmer 1 hr. longer

Add salt & pepper to taste.  Add some spices

to flavour it. Maggi Sce in pot. *2½ lb

Fairly stale loaf bread, cut off end so

that u have square loaf.  With sharp

knife cut away inside so that you

have walls of loaf ½ to ¾" thick.

Lightly boil some beef or pork, kidneys,

liver, bacon (if pork).  Then fry in oil

making rich gravy, spiced.  Also boil

Tomatos, carrots, etc (or fry)? Fill the

 

 

If teeth troublesome:- Sheep's Brains

fried & mixed & eaten with

Tripe: and mushrooms or Asparagus

make  fine mixture

hollow loaf with the ↑(breadcrumbs if necssy) mixture, not

too wet, but not dry.  Carefully cut

the rest of bread end, so that you can

seal up the square loaf tightly.

Skewer or sew ends.  Pour over

the bread the rich gravy &

bake slowly till nearly cooked

through, & bread brown.  Good

PRAWNS (V.G)  Take abt 1½ lbs prawns ∧work through mix Soak

10 or 12 hrs in vinegar. First boil & peel.

also mixed in vinegar with prawns are
