A special Salad
Get some salted herrings (uncooked). If too
salty, soak in milk for few hours.
Then cut into dices. Make a mixture of the
following, diced also: Beetroot, Cucumber,
raw Onions, Green Peas (cooked), Potatoes boiled in
skins then diced, I sour apple, all well mixed.
Then in separate large cup or dish make a
mixture of Claret Wine, Cayenne Pepper, Salt,
Finest Vinegar (Cider, Taregon or if can't
get these, best malt) touch of lemon juice.
(Have to expmt with quantities).
Pour this over to soak thro' vegs & herrings.
Make good rich dressing (Remoulade, or
other Sauce, Thick,) & cover it over Vegs etc.
Garnish xx the whole salad with H/B Eggs,
& sliced Gherkins. Chill all in Refrig
Fine mixture for Asparagus
Make mixture of H/B Eggs, hot butter
sauce, pepper, salt, & little grated Nutmeg.
Fork this over asparagus as you eat
it.
SALTED DUCK Eggs:- 12 eggs in 1¾
pints water (boil then cold) & 1½lb coarse Salt.
Add mud & woodash if avble (also boil this)

12 to 20 days shld do the eggs, wh
Shd be oily after they are hard boiled,
& slit lengthwise. Good for
Curries, Nasi Goreng etc
PANCAKE
Make an ordinary pancake, but cook in
it a good thick rasher of lean bacon,
with salt, etc, & when done, cover with
warm golden syrup, on hot plate.
A good Sambal for Rice can be made
of fried mashed Sardines, mixed with
fried ground Chillies & Onions, salt
pepper etc. Fry in Oil, & add the Tin
oil
Try frying Tinned Bully Beef with
onions, potatoes, tomatoes etc Carrots.
Dont forget GINger in Sambals
Hots up all Sambal mixtures.
Good offal Meat makes splendid Soup Base
TRIPE boiled in milk, with Onions, potatoes,
Carrots, salt Etc to make a thick stew.

PEA SOUP
Mix IN Pigs Cheek, Trotter meat, any parts
of Pigs head, & Sausages & Bacon
with onions etc. (& Best Offal Meat)
RABBIT PIE:- 1 or 2 fat Rabbits
Use all flwg ingredients:- Bacon, H/B Eggs,
Salt, pepper, dash of Sauce. Green Peas, Onions
Potatoes, Brown Beans
Make rich gravy by first }
lightly frying Meat in Oil or}
Dripping }
PASTIES:- First make rich oily paste by
using plenty of butter or Margarine
with the flour mixture, so it doesn't bake dry.
Make, say, 1 doz. pasties & use:-
Chop fine & mix well:- {1lb Beef, 1 lb Pork,
{½lb Pork Liver.
Fry meat first as in Rabbit Pie, then:
Green Peas, ∨(boiled)→(plenty) Onion, Potatoes, 1 Tomato, Fry & MASH
all together with pepper & salt.
& couple or 3 ground
Chillies.
H/B Eggs & = Dash of Sauce=
A DELICIOUS Lunch:- Mash togethr:-
Lightly boiled Cabbage, mashed potatoes, sliced
onions, & 4 ground Chillies. Fry mixture
in Oil or Margarine with salt, pepper, &
dash sauce. Serve hot, covered with 1
or 2 well-done fried eggs. For meat:-
fried sausages, Kidneys, Liver or bacon.
Brains.
Peanuts
Food value is so high, equal meat, it is
essential use it in every form- Peanut butter,
Pnut flour in cakes, etc, fried with sambal
etc etc
Spanish Dish special
1¼ lb best Beef, lean, salt & pepper it, & put
aside for ½ hr to soak in. 4 table spoons
Salad Oil in the frying pan & when oil boils
put in 2 small onions complete. In the
meantine dice meat small squares
with Maizena & Then put in pan with
onions & oil. Then add in pan 2
big onions sliced, 3 ∧red chillies sliced,
& 3 green, 1 tablespoon sugar, piece of
sliced ginger, 1 Tablespoon ginger liquid.
Let this simmer until meat soft. In
meantime press 1 lb Tomatoes thro Sieve,
& put in pan when meat soft, & let
simmer for abt. 10 mins or so, & Then
take pan off fire, mix in mad liqueur
glass of Madeira wine & juice of lemon.
Serve it hot with dry rice, or mashed
potato, or toast.

Made a special efffort to write up Diary today
(after sevl months.) as its Et's & my 29th Wedding
Anniversary, my 4th as a prisoner. Have been
too ill lately to write up Diary. Drs gave me
12 Strychinine injections- my trouble is
weakness due starvation. I weigh less than
9 st. Many have died or collapsed lately,
due systematic starvation by Js. The countryside
abounds in wild pigs & coconuts
but we get nil of former & very few of
latter. Our one thought is of food &
freedom & to see our families. Got my
3rd p.c. from Et dated May 44, &
she had had news of my whereabouts.
Not long now, thank God, we hope.

Had bad attack of Bronchitis & Malaria simultaneously.
2 weeks. Now very weak. Thank God
War news good.

Altho' Drs class me on "weak" list I feel much
better because recd 2 p.cs, 1 from Et 1 from
Joan, dated Octr 44, 10 months to get here.
Et seems very well & Joan wrote:
"Make every effort Keep going little longer"
which bucked me up no end. Providence
willing, I will be able to last it out Till
freedom.
