SUNDAY 10
Vitamin D Stimulates use of calcium,
i.e. it is bone-forming. Prevents
ricketts. Sun-rays make Vitamin D out
of the fat under our skin.
MONDAY 11
Lack of V. D E, could result in
still-born in children.
Lack of Vit. K results in "bleeders"*
Only manufactured - not in nature
form. *Stimulate coagulation of
blood
Try Margarine for Frying, i/o
Dripping, especially for Fish.

Rissole special, with curry powder.

VITAMINS
A, D, & K, can only be diluted in
fat or oil. B, C, E, H can only be
diluted in water. [So eat, at same
meal, fats or oil for ADK, water for
BCEH].
FRIDAY 15
Lack of A causes night blindness - hardening
of eye pupil. Hardening of surface of
lung tubes, - kidneys bladder [with as a
result kidney and bladder stones].
Lack of B1 causes Berri beri & bad
circulation. B1 stimulates digestion
of Carbohydrates, & assists good breathing
& nerves.
B2 assists the replacement of Tissue,
& building of new Tissue -Cures
pellagrea.
C is destroyed by heat, & oxygen therefore
dont cook C Vitamin food. It
protects against infection & stimulates
the whole well feeling of the body -
It prevents insominia.
It prevents fatigue and assists body's power
of recovery. (Eat oranges.)
Brown Beans:-
Boil,→xxxserve fried↓separately pork & bacon thro' the beans ∧kidney∧fried
serve with hot cabbage, & pickles- serve
fried onions mixed with the beans. {Thick

Pork Pie:-
Instead of the usual steak & kidney
pudding, make a pork, & bacon & pigs
Kidney & liver boiled pudding. Spice with
chillies etc. Keep ½ for cold. Bake
¼ hour to brown it.
Prawns:- omelette one ½ prawns
other ½ spinach latter well spiced.
Serve hot. DRINK STOUT
Eat plenty of boiling Bacon on a/c
Vitamin A, for eye Kidney & bladder
weaknesses. Black pudding &
blood sausage from good shop (Sylvesters)
Dry in sun well small fish, ∧salted & prawns fry in oil
with ground chillies, pepper & stir
in Anchovy Sauce. Add few fried onions↓& pinch lemon
Makes delicious addtn Curry.

SAMBAL KAJANG
*Get Et to make a good quantity of
thick peanut butter. Fry this
in oil with ground chillies, fine
→chopped onions, salt, when nearly
finished add to the frying mixture
molasses. If unable obtain
molasses try brown sugar or preferably
treacle- not white sugar.
If unable obtn. chillies, try black pepper
but chillies much better. Expmt with
quantities to taste. Delicious. The
peanut flavor should permeate.
→Touch of Ketchup or Worcester Sce

Layer casseroled meat, etc

Eat warm
OX Heart Wash with fresh water boil till
soft, then take out of water cut in slices ½" thick.
Then fry in lard slowly. Rub in salt
& pepper well b4 frying. Fry with sliced
Etft on butteres
onions & mushrooms. EAt on buttered
bread warm; also can eat with baked
potatoes & salad.

Calves or Pork
Liver Boil with plenty water
whole, until fork goes
easily in. Take out of water, & let
get cold. Cut in thin slices, rub in well. salt
& pepper & eat with bread & butter, &
mustard etc. Eat cold; if u wish to eat
hot, fry the slices with onions etc
Take 1lB pork & 1 lb beef. Mince it.
Take 3 raw eggs. Mix all of eggs in, then
salt & pepper∧& [[?]] 3 or 4 spoons fresh milk, &
3 or 4 big spoonfuls dried breadcrumbs.
Mix all together, Make into balls tight.
Fry in a closed pot ∧with 1 lb lard & big
spoonful butter. Add 1 big onion & 1 big
tomato [onion sliced, tomato halved].
Fry all together till dark brown.
Boiled potatoes, peas & carrots.
Hash
Take 1 or 2 lb beef, cut in dices,
put in closed pot, plenty water,
add 1lb. sliced onions, salt, pepper, 3
cloves, 1 or 2 lecks (not leaves), little
nutmeg, laurel leaves, 4 or 5 whole.
FryBoil all in closed pot till meat soft,
Then remove from fire when water nearly
all gone. Then add 2/3 big spoons butter,
mix 2 or 3 spoons maizena with water;
stir this in; add little vinegar. Now
fry all slowly for 1 or 2 hrs, add water
if necssy till very dark brown. Eat with
boiled potatoes hot.
Use baked [[Sausage?]] in P-soup
Take 4/5 7/8 pork sausages, fry. Before this
boil 1 cauliflower, add butter sauce when
boiled, little nutmeg. Boil potatoes, then
mash, add 2/3 eggs, 4/5 big spoons milk,
salt, nutmeg, all to the potatoes, mix.
Make small balls out of this potato mixture,
& fry in oil or butter. Peas/carrots.
Boil rice. Take 1 or 2 oz sultanas, put
in hot water. 1 or 2 ozs almonds in hot
water couple minutes, remove skin. Mince
almonds. Boil ½ 1 pint milk, add sultanas

& almonds & vanilla to the milk. When rice
is boiled, stir in the mixture of milk etc.
Then boil all slowly, stirring. When ∧V Thick
remove from fire & let get cold. Then
cut in slices & bake in pan with
butter Till nice brown. Eat warm
with sugar or cold.
Hors D'oeuvre
Fry white bread in butter until well
browned. Cover with fairly thick
layer of spinach fried in olive oil
with spices. (rather firm but wet)
Embed in this the ½ of H/B
egg-prepare yolk of egg by mashing
with Anchovy paste, few finely sliced
raw onions, seasoned with 2 drops
Tabasco or chillie or paprika.
Put yolK paste back into egg,
top egg with large slice [[?]]
top again with melted morsel
cheese.
Don't boil spinach ∧unless old fry in hot oil
add, salt chillies etc to oil, add
water & fry in covered pan till

Try first, with dozen large ∧raw
duck or hens eggs. Place in v. heavy brine
mixture (coarse salt). After 2 weeks fine
for frying with Bacon. After 1 month
Fine hard boiled for Curries, salads etc.
