Raw sliced Cucumber, made sour with
vinegar.
Meat Sambals: -
Take rest of chickens & fry in butter,
(but not the liver, Kidney etc). \\
there
Liver, Kidney etc. are chopped in sq.
pieces abt 1/2" &makexxx, put
on woven sticks skewers, salted,
dip in Ketchup, then fry grill on
slowing fire (flame not touching)
Brush lightly with oil while cooking.
Use pnut butter sauce on the table.
Pig Sati: Take rather fat pork,
diced abt 1" sq - dipped in Ketchup,
& ground up aniseed & grill as above,
with brushed oil. (dip after frying)
Sauce for pig: - Mashed tomatoes, &
few chillies, & Vinegar, (slightly cook)
Eaten with cucumber.
Beef: Diced 1 sq. fried in butter oil
as usual with chillies. Remove
meat from oil & then mix the oil
with curry powder, salt, & little sugar
until yellow thick sauce. This sauce
must be very hot, & then serve the meat
in this sauce.
Mix: Make mixture of 2 chillies, piece
of ginger (marble size), curry, much
onions & only 2 drops of citronella
oil, 2 laurel leaves, salt, coconut milk,
little aniseed, brown sugar. This all
is cu boiled & then the I some new beef
is put in, & also pvsly cooked wh. or
br. beans. Whole is cooked until
everything quite soft in open frying pan.
Beef Quantities: abt ½ lb in each
case.
Fish: Select a dry sort of fish∧ (Also Crayfish) fry in oil,
well salted, & stripped. After frying grind
into powder whole fish incldg. bones.
Note: Remains of coconut after milk making
is fried in open pan, first dry until
light brown & then added 2 spoons
of salad oil 2 tspoons treacle, salt
1 chillie, & some fried onions & then
fry again to mix all together. Serve
with fried pnuts fried in oil [[?]]
Skins. - Dark brown,
Krospock, Udang. H/b eggs with
curry sce.
Dessert.
Fried bananas, cut lengthwise in
2. Flour, paste or without.
Fried pineapple in flour paste.
Gala malacca. Cooked brown sugar.
& iced Tapioca.
Ice creams if necessary
Fresh fruits.
Take plenty of cold beer with this
Rijsttafel!! & sleep well afterwards.

Recipe
Rijsttafel is abt. a day's work, but
sambals on next page can be
prepared in about ½ hour.
In making Curry Sauce use unsweetened
Condensed Milk, i/o Coconut
Milk as thickener. Use oil, xxx
butter ^& lard not water, when mixing, etc
Curry powder - add chillies ^etc as
powder is inspid.
Sambals for serving with Fried Chicken
Roast Beef etc, when Rice also
is served. 4 persons
1. 8 chillies 16 small ^brown or silver onions, chopped, ground up, salted.
2. Same contents fried in salad
oil (abt 4 spoonsful) ground
as above b4 frying.
3. Same contents as No. 2,when
nearly fried, add 4 spoonsful of
liquid brown sugar continue
frying until all is rather dark red.
Take care not to fry so long that
sugar cakes on pan. Remove
from pan [[immy.?]] finished frying.
4.First fry 8 ground chillies in
oil, when nearly ready (sharp smell
gone) add small pieces of raw
*meat & fry until meat is brown &
rather hard. Add cooked onion if
necssy.

5.Same contents as No.2, when
Cooking fiercely [[?]] prsly stirred
egg or 2, Continue stirring until
egg is desiccated into small bits.

Note:- Add Tomatoes (cut up) to
Nos. 2,4,5 as a triaal
6. Contents as No.3 but use
Ketchup i/o Sugar.
Teng Teng
Take equal quantities of brown Sugar
& dehusked peanuts.
First roast peanuts, dry until light
brown, & remove skins.
Boil the brown Sugar with little water
until it is very thick & bubbling,
then add peanuts & stir well in
frying pan, when all sticks well
together remove & spread on
smooth & oiled wooden surface.
(or buttered).
Cut in pieces while hot.

I would like Et to get these for me
as I have more or less set my heart
on them when I get free:-
(1) A roast ∧or casseroled Duck Stuffed with a
mixture of Calves Liver,
onion∧Bacon bread crumbs, chillies etc,
served with baked sausages,
casseroled cauliflower, & few mushrooms
if obtainable & onions.
Try drinking
Stout with Curry
(2) A curry of mixed ∧Vary with Prawns & Crab
Calves Liver
& Beef, ∧or Pork & rice (or boiled white
beans instead of rice) & for
sambals:- Chutney, H/B Eggs,
Roasted Peanuts, Pickled Walnuts,
Chillie sauce & little dried fish.
(Saffron the rice)
Camp Drs say I should eat
as much Calves∧& Pigs Liver as
possible on getting free, &
casseroled foods
also Fish. P.T.O.
Large Onions hollowed filled with
Calves Liver, Beef, [[?]] etc, paprika &
tomatoes. ∧& then fried. Surround on plate with
mashed potatoes. See couple

NUTRITIOUS
Cook
In a Casserole Dish, put 4 or 5 Pork
Sausages & slices of Calves Liver.
After few minutes add green peas &
few tomatoes, & onions salt, pepper
etc. (Gn Peas & Carrots)
When all nicely cooked break a
large hens egg over the top so that
it should form an egg-crust over
the top of the mixture. Cook little
bit more.
Note: substitute Ox Tail meat for
the pork sausages if you wish.
Baked or Casseroled Rabbit; &
Date Pudding with Ginger & Raisins.

Mix boiled Carrots & boiled
green peas together for fine
flavour.
Never fry fish in dripping,
always use peanut oil or
salad oil.}
or Margarine} (Dripping de-flavours fish)
Hams.
Buy whole ham ∧smoked but before cooking,
cut it in half & boil only one
half of it. The other half is much
nicer just in its smoked condition.
Then fried with eggs & used in
pea soup etc. The smoked ½
will not go bad even if not kept
in Refrig- just hang it in the
air. This ½ can also be eaten
unboiled if preferred, or casseroled.
Good Salad made with Herrings
in T.Sauce, Tomatoes, Beetroot etc
[[Godo?]] Curry ∧Prawns & Crab made of Tinned
Salmon & Rice (or Beans i/o Rice)
(Saffron rice) Brown or White not
Long Green Beans
Remaulade:-
A fine Sauce to be used with Hot Fish
Mayonnaise mixed with little ∧wet mustard
& finely chopped ∨unsweetened Gherkins & Onions (pickled)
From Drs:-
Until you get your strength back keep
a supply of roasted peanuts (oil cooked)
on hand, in which little fried onions (fried
separately) are mixed & salt.
Excellent:- Casseroled cabbage & Tomatoes,
These contain many Vitamins. Drink,
or use the liquid in soups.
[[Tumul putch?]] for Liver trouble
Kumis Kuchine " Kidney "
Ham Rector (for celebration):-
Take 12/14 lb Ham boil as usual
adding bottle ∧dry fizz to boiling∧cold water,
when cooked (thoroughly) Remove
whole rind very carefully, then
pierce with long pronged silver fork
make many holes (longish) pour
slowly dry sherry ∧over ham∧ in holes s so
that penetrates. ∧(2 glasses) Make a dough of
molasses mixed with finely powdered
crumbs, pack it round abt ¼".
Put ham back in oven & bake
it until done & paste is ∧well browned.
Even heat. Abt 1 to 1½ hrs.
Experiment with follwg:-
Boil well some White Beans. Then
make a Curry Sauce, using Butter
& milk (with ground Chillies fried
in Oil) etc; so that you get a
rich hot sauce. Then boil?
lightly some chicken, beef, & liver
& then fry√ this meat mixture.
Serve the Curry Sauce hot over
the hot meat & casserole the
beans, first pouring some of
the curry sauce through them
in Casserole Dish. With the
Beans, cook Kidney Potatoes
& few shredded onions (if u like)
If made properly this makes
delicious meal.
Drs say make yr own pork
Lard & use it in food (mixed
with casseroled Lentils etc)
Jam Roll with ∧Raisins & plenty Lemon & M∧or Fig or Strawberry Jam & Cream
Rhubarb Tart
Herring Pie with Tom. Sce from the Tin.
Get blood sausages, black puddings, Kidneys
etc from Pork Butcher. Fry the sausages
for trial.
Prawn & Crab are best*→ NASI GORENG [[?]]Soak the rice.
Simple & delicious
First make your Sambal of Chillies,
Onions & Oil →(Lard, Butter or Pnut Oil) as usual.
While doing this the Rice can be
xx boiling. It is important to have
it dry, cooked ∧& steamed.
Also prepare small pieces of ∧cooked ham,
liver & chicken, & boiled vegs, [[sasgs?]]
celery, cabbage chopped fine.
Add salt. Then mix all together
& fry together (sambal & all) in
hot pan with oil. Leave Cucumber
in Vinegar separately.
Add strips of cooked eggs to top
the rice. ∧with fried onions Make plenty of sambal
at beginning. Nasi G. should be
red in colour when served.

Drs advice:- On a/c my bad lack of
Vit A
causing bladder & kidney trouble
Get a Good lump of xxxGammon Bacon &
casserole * (or boil) * it together with
Peas or Brown Beans. Serve hot with
mustard (&pickles). Cook the bacon
in one piece; ||add steamed Cabbage.|||
Also, get good blood sausage & fry
it in oil between slices of sour
apple (also pineapple i/o apple for
change).
Salad of raw cabbage cut fine ∧cold green peas
lettuce, tomatoes, & beetroot ∧or carrots with
a good oil (peanut or salad oil)
& eggs & OX-Tongue, fat beef.
(The day the Drs told me this I was so
weak they ordered me to get any
left over food in Camp after [[?]]

Re Bacon, it should only be finished
off boiling together with the Beans or
Peas, i.e. it shd be almost properly
done separately before otherwise too
much Bacon fat gets into the Vegs.
Note: This Dish is not supposed to
be like Pea Soup when done, but
vegs flavoured by BACON meat.
Gammon(lean) can be cooked all together
with the Vegs.
Sambal
A delicious Sambal can be made
of finely chopped Cucumber, Chillies,
raw Onions & Macassar ∧or Anchovies Red Fish.
Use little oil if necssy.
(If no M.R.F. substitute dried fish
soaked in Chillie Sauce. Anchovie Sauce)
Pineapple well rubbed with raw
Chillies tastes like Strawberries,
- Add little cream or sugar
Use Margarine for frying Fish
Polish Pasty-
Take 1 cake of ∧Fresh Yeast(abt 1"sq.), 1 pt.
of milk scalded & cooled, 4 yolks &
1 whole egg, ½ cup sugar, ¼lb butter,
½teaspoon Vanilla, grated rind of
1 orange or lemon (only coloured outer skin)
1 Teaspoon Salt.
Dissolve Yeast in the lukewarm milk,
add 2 cups Flour & let stand in
Warm place for ½ hour. Then beat
eggs, sugar, vanilla, grated rind & whip
sparet in a teaspoon of Salt until light.
Melt butter & add This To The Sponge.
Now add 5 cups of Flour. Cover it
cold (uncooked) for abt. 1 hr or until
double in size. When light turn
it out onto a floured board &
pat with hands until Dough is
½" in thickness. Cut with a
doughnut cutter, Cover & let
rise 2nd time until light.
Drop into deep hot oil or fat
until golden brown.
