Tues 10th As many as possible to go to lunch - matron in tears heard
the death of her friend 1 so badly wounded, not to hinder boys shot him

Had lunch Matron announced all to go but 12, Matron, McGlade, Tait,
Kerr, Wilton, Oram, Ashton, Casson, Hempstead, Short & myself.
Other girls to hold selves in readiness to leave minutes notice
3pm orders everyone to go - raced & got small cases & hats & coats
all assembled - much handshaking, wishing of luck, messaging

team - wrote to Jim - removed masks from sacs to use for our
rations - 4.30 pm all went back to green house c.o. coming
speak to us . . had tea - c.o arrived made a very nice speech &
thanked us & latest orders were all to remain until 11 am
common - sat & had champagne on our villa verandah -
very little sleep - airraids & shelling - Big Bertha not far in
action.
Wed 11th 11am all assembled 30 names read
out to leave immediately, Tommy, Andy & Maisie
to go - said sorrowful farewell to Andy - Clarry
to go on N.D. Jenny & I carried on in full chapel
we've not heard or seen anything of Jim for over a
week - bombing & shelling very near - [[more?]] air [[rds?]]

Feb 12th Thurs.
Tray of sweets snatched from hand by
Major Holmes and told to go for my
life to the quarters Jenny in middle
of preparing leg for amputation
- chapel in chaos with dressings
dressing to be done to say
nothing of the sponging Hurried
farewell to boys who smilled but were
really sad at heart.

Arriving at quarters quickly changed
taking handcase & managed to get the
gramphone though into English
ambulances and so a sad farewell

wandered back to the hospital and
drove out of the girls Good bye
smiles from the A & D boys.

First visit to Singapore since our
arrival at St Pat's place wrecked
many quarters drive to
St Andrews Cathedral where we joined
the 10th E.G.H. names taken & told
would be leaving in [*fortable*]
three days

ambulance & drove to docks - boys
cheering moving along the roads
hundreds of cars near docks just driving
into harbour or bombed - single file
along the wharf - a couple of raids.

goodby to Col White & Capt Abromavitch -
Stop along side small ship none
other than Vyner Brook - Jimmy Miller
on look out for Harris & I give in his
cabin & makes us as comf as possible
looked after us marvellously well
cigarettes - whisky & everything in could
drawing out into harbour and
looking back at Singapore place just
a mass of flames along water front
Island burning on the other
side a terrible & unforgetful sight -
retired early to a disturbed night
much shouting & ringing of bells - found
out next morning we were lost
amongst mines field & only Bill Sedgman's
good navigating got us through with
only the fires to guide him.

 

Anchored near an island most of the day
food question very grim - something got
down on our army rations - everything
pooled & having two meals a day of
army rations - biscuits & bully beef.
Jim & Bill still doing their utmost for us.
life belt drill - if necessary all civilians
to boats first whilst girls can to go overboard
& swim others allotted to boats - fingers
being kept cross - almost ran into a
naval battle much searchlights just
reaching over, in took shelter behind an
island
Sat 14
Beautiful sunny morning, calm sea &
anchored very pretty island - peacefulness
disturbed as planes flew over &
machine gunned boat all took to
lower deck as pre arranged but raid

all over & much discussion on plane
incoming us or enemy aircraft - took
up anchor & steamed along - 2 pm
air raid siren all down to lower
deck & flat down & six planes
attacking - once more bombs hit
second third time out of 20 bombs
third bomb below water line.

Prawns for Nazi lemar
Nazi lemar 1 coconut first extract 1 cup
very thick milk - then extract No 2. - stand
rice in No 2 milk for 2 hrs - 1 mark measure &
boil - when drying add thick milk & steam
off. pandang or bay leaves for flavour.
Prawns big prawns - chop off leg leave on skins
thick paste of tamarind, a chinese [[?]] (thick)
salt add prawns to mixt stand little while
rice and all in pan- put all in & cook till
dry
fish slice rub ¼ ground saff & salt deep fry

fish curry fish slice grind onion garlic ginger

fresh chili saff,  several languas bruise both
[[?]] - fry - ^add juice of coconut little tam water
serve with braised sambal & cucumber

Curry Tiffin

Banana leaf add washed rice ċ sambal prawns

cucumber sprinkle ċ coconut milk wrap

in leaves & put in oven & serve ċ tomato &

Nasi Kunyah (Drena Boswell)

Cook rice ½ pounded saff (just coloured), S (not much

water) when drying out add  1 st coconut milk

raisins almonds fried sl onions & garlic (lots) 1

tbsp butter, stir & allow to dry out slowly - serve ċ

kroppok, H.B. eggs, inc lettuce, tom, omelettes, prawn

fritters & fried onions.

pound onions garlic - make fish balls

vermicilli - simmer then add sp onion
celery more tong choy.

much tamarind water - boil - add fish, sug
celery, spring onions. 

 

Country Captain

Segment chicken - grind chili, saff (small) trassi fish

paste - juice of one coconut made in no 1 & no 2

thick) sl onions garlic (brown individually

golden brown) - make paste of ingred ċ no 2

cocomilk - boil chicken in this till tender

add no 1 - separate frying pan add oil take

out chicken & fry brown add juice into fried

chicken - let gravy dry up slightly - garnish

ċ fried onion & garlic - may serve with potatoe

chips.

Variation (Ceylon style) 2 tbsp small [[gintam?]] 1 tbsp ling 1 piece

saff - juice 1 coconut onions sl dried chili

(meat or chicken) 2 [[gintams?]] ground ċ saff. finely.

Sambal goreng Curry

Pork meat, chicken or prawns.

Meat. saff trassi onions garlic ginger ^fresh chili

Saff trassi ½ onions ½ garlic ½ senai all languas

grind - other ½ onions garlic ginger all chili

½ senai slice finely. oil add ground

ingredients brown add meat boil ^in No 2 add xx

Chap Chye

Go to shop ask for Chap Chye barange - as much

cabbage turnips, soyu cubes (tawchoo) pork

prawns onions garlic tomatos bamboo

Fried Meh Mu   Rose Woodford

Pork, crab, prawns, eggs & pigs liver, tripe chinese

sausages, ham spring onions corriander leaves

or celery - chilies taw choo onions garlic- cucumber

Meth Pork boil little gravy wash prawns heads -pound

heads - boil- boil liver, tripe - steam sausage - omelette

Pork (prawns extra) kang kang towgah, fat cut

into cubes melted down - keep crispies -

strain - add pork & pork bones boil - shred

kang kang- meh mu through boiling hot

water - add onions ^to soup & pork crispies & shredded

pork - ketchup - garnish sl chili

ramatin fish balls - raw fish pounded sprinkle

 salt water to paste - form balls drop into hot

water - roll remainder in sausage form

Pork Diah

Pigs Trotters

Boil Pigs Trotters till tender - sl onions garlic

ginger chili tamarind

Oil add Pig trotters - plenty ketchup - add

dash tamarind water add onion garlic

ginger simmer add sugar to taste - take off

fire add chili

Variations add whole H.B. eggs & cook ċ gravy

Barlin Assoim

Pork cubed onions garlic several green chilies

saffron tamarind. pound saff to paste - 

onions garlic several slice - oil add saffron

(green chili slit -) add pork add tamarind water

add onions garlic serai simmer till pork etc cooked

lastly add slit green chili & sug to taste.

Chicken

Disjoint chicken, onions garlic ginger chili

taw choo tamarind

onions garlic ginger slice a lot chili sliced

pound taw choo - fry chicken nice brown 

remove - some oil put taw choo fry

 

Apple & Cheese pudding
2 cups soft bread crumbs 2 cups sl apple ½ cup sug 1/8 tsp mace

2tbsp butter ½ tsp cinnamon 1 cup grated cheese 1 cup

pineapple juice - buttered dish - layers of crumbs apples

cheese sprinkled with sugar mixed with spices top crumbs dabs

butter, pour over pinejuice - bake serve ċ cream or ginger [[?]] sauce

Crumb Pudding

¾ cup sug 3 tbsp melted butter 2 cups toasted crumbs 1½ tsp

nutmeg 1 tsp orange or lemon rind 1 cup dates or raisins 1 cup

milk 1 tsp Soda - mix in order given turn onto buttered

mold & steam

Raisin Peanut Stuffing

2 cups raisins ¼ cup butter ¼ cup chopped onion 2 cups chopped

celery 1½ tsp s & nutmeg 1 cup hot milk 2/3 cup crushed

toasted peanuts 6 cups toasted breadcrumbs - wash

raisins melt butter add onions celery season & saute

few minutes until mixt soft combine hot milk &

peanuts add to raisins & crumbs mixture - for turkey

Mock Mince Pie
1½ cups each raisins diced apples cranberry cider ½ cup

B. Sugar 1 tbsp vinegar ¼ cup butter 2 tbsp flour ½ tspn each

nutmeg cinnamon ¼ tsp cloves 2 tbsp minced candied

peel orange - combine all ingred simmer 10 mins add

raisins cool & fill pastry shell cover ċ pastry bake mod

oven 30 mins

Spicy Raisin Sauce

1 cup raisins ½ cup butter 3 tbsp brown sug 3 tbsp flour

2 tsp [[made]] mustard 1 tsp cinnamon ¼ tsp cloves

1 tsp paprika ¼ tsp S 2 tbsp molasses 2 cups water ¼ cup

B. sug 2 tbsp vinegar - Blend flour seasonings molasses

next combine ċ water & vinegar & sug bring to boil pouring

over creamed meal add raisins simmer 10 mins

serve with baked ham or poultry

 

Crumb Xmas Pudding

2 cups toasted crumbs 3 eggs milk treacle or honey -

syrup sug - mix & let stand for 1 hr add all kinds

pres fruits 1 pres ginger 1 syrup - 1 liquer glass brandy

nutmeg chopped almonds almond essence - turn

into buttered mould steam 1 hr

Southern Chicken

wrap pieces in bacon & stick ċ 2 cloves & sprinkle ċ

B sug flour & seasoning place in baking dish & fat

bake in hot oven - in ½ hr reduce heat to med.

add water onion & cook till tender basting frequently

Pate de Fore de bean 

2 tins caflves liver paste 1/8 pt cream 1 tbsp madeira - S -

Wor sauce - toast -Beat cream mix paste paste

Madeira S & Wors sauce - grease dish brush ċ egg white

fill ċ paste cool - serve on toast

Cold Duck 

Sage & onion stuffing apple, fried apple, orange slices on top

lettuce orange slices grated carrots cheese parsley

sweet pineapple sauce.

Sauced Pig Trotter

Boil till nearly tender add 1 cup vinegar 1 dstp sug 3

pieces chop ginger simmer till tender.

Sweet Apple Chutney

4 lbs green apples 1 lb fig 2 lb onion 4 ozs raisins 3 pieces

ginger (in syrup) 3 oz mustard seed 2 pts malt vinegar

1 lb brown sug S & p chop all ingred place ċ sug & vineg

& salt in cast iron pan stirring constantly - boil then

simmer slowly 2 hrs - bottle seal when cold.

Roti Babi

mince & fry any left over bacon or ham curry ċ chop onion

scoop centre out of stale bread & fill ċ meat, dip slices

in beaten egg or butter & fry.

Pork & Beans

Soak beans over night place pieces bacon & pork in

cass ċ beans tom. water dsp golden syrup cook

slowly hrs.

Herrings

layer herrings sprinkle oatmeal on top - bake.

 

Choc Egg puffs

sep egg whites from yolks

Sweet Dumplings

6 sl stale bread soak in water & press out liquid - place in

dish - yolks 2 eggs ½ teacup sug ½teacup milk 2 tbsp flour pinch

S & mix well - soak prunes or apricots - take out stones

Now take spoonful of mixt spread on palm place fruit in centre

& cover over - roll into ball & roll in flour on board - 

drop into salted boiling water when floating on top take out

Heat butter & pour over dinner - serve ċ sug & cinnamon mixt.

Dumpling Potatoes 

½ lb grated raw pots & ½ lb cooked mashed pots 2 eggs S & p

lge grated onion - form balls on floured board - boil ½ hr

in salted ^boiling water with 1/2 lb bacon cut in dice 2 large onions

cut up - fry until crisp & put over hot dumplings & serve ċ

kidney gravy.

Salmon Crusty

1lb tinned salmon ¼ cup med white sauce (cold) ½ tbsp chopped

onion ½ tbsp chopped parsley 1 cup flour (½ -¼ lb shortening) 1 tin peas

Flake salmon reserve 6 pieces - add white sauce to rest of

flaked fish & seas - Roll biscuit dough to long strip 6" wide

& ¼" thick put salmon mixt down centre fold sides over

to meet & piece tog - put on greased baking dish form into

ring pressing ends log - cut 6 slits in dough on top of ring

& insert 6 pieces of salmon brush ċ melted butter & bake in

oven for 25 mins - slide on serving dish & fill centre ċ peas 

& mixed pickles.

Satees Nanis

½ lb meat 2 garlic½ dsp ketchup gaela Djaina lemon juice

S - cut meat into small pieces make ingred fine - mix

ċ meat ketchup lemon skewer & roast

Sambal for Satee

3-4 young lemon leaves 2 red chilli 4 red onions 4 dstp

ketchup lemon juice & sug - finely slice ingred add ketchup

sug & lem juice.

Russian Mincemeat

Cut up 1lb beetroot 1 lb bringal 1 lb toms boil beet till ready

add fried cubes bringal, toms - prepare minced meat ċ onions

p & s, a little garlic parsly or sage - shape into cutlets & flour 

fry in lard until golden brown & put into veg & cook 10-15 mins.

 

Stuffed Cabbage

Steam for ½hr take out centre & stuff ċ layer butter beans

layer fried bacon, layer fried onions, fried tomatoes, fried

pots another layer onions - mince cabbage heart put on

top ċ bacon & close cab & put dabs of butter on top bake

in pyrex.

Fruit Roll Sweet

6 ozs date 6 ozs apricots 6 ozs figs 6 ozs prunes put through mincer 

& add 6 oz chopped nuts 2 tbsp honey 2 tbsp powdered sug

juice 1 lemon & make into small finger rolls & roll in

grated cocoanut.

Spiced Fruit Roll

½ lb S.R. flour, 4 ozs sultanas 4 ozs shredded suet 2 oz currants

1½ tsp cinnamon 2 ozs candied peel 4 oz demerara sug, castor sug

water to mix nutmeg or grated lemon rind instead of cinnamon

Sift flour & spice into basin add suet - mix well - add

sug & fruit stir in sufficient water to make a soft dough

turn onto lightly floured board & form into smooth

roll wrap in pudding cloth tie both ends & boil 1½ - 2 hrs

serve dusted ċ castor sug - can be steamed.

Apple cream for gingerbread

1 apple, 1 egg 1 cup castor sug - grate apple add 1 cup castor sug

& 1 egg (stiffly beaten white) beat 20 mins till light & fluffy.

Bran Bread

1 cup (kellogs) bran 1 cup flour 1 tsp B.P. 1 cup sour cream

1tbsp dark treacle ½ cup brown sug ¾ cup chopped prunes

or raisins 1 egg, S - place bran in mixing bowl & pour 

over it treacle & sour milk let soak a few minutes.

& gradually add flour mixing well add sug & fruit

mix in well (B.P. S added to flour) put in greased tin

steam 3 hrs.

Salad Strawb

1½ cups cottage cheese ¾ cup halved strawberries 3 tbsp may

lettuce 1/3 cup chopped salted almonds - while strawberries mint

leave - combine cheese & may - add almonds & strawberries

Pile in lettuce

Chilli Con Carne

1 lb beef ¼ c suet 1 onion cut finely 1 clove garlic 1 green pepper

4 cups toms S & p 2 tbsp chilli powder 1 lb lima or red beans

Soak beans & drain - cook suet & onions, add beef, brown

thoroughly add onion & garlic & brown - add toms chillies & beans

Cover & cook & serve ċ rice.

 

Sat 28 Awoke well after sunrise had remainder 

condensed milk & our half biscuits - still in two minds as

to go onto Muntock or come back - decided to wait until some

result of visit to campon hid glass & pillows in case malays

visit hut during our absence - had a couple of cigarettes & started out

looked back felt last time Id be seeing the hut - all looked.

peaceful enough - arrived at campon no one in sight - [[knocked]]

on [[door]] - old malay answered would have nothing to do ċ us

All we could understand was "Muntock" - returned back

½ mile followed by a couple of malay children & a few minutes

later by a malay waited until they caught up ċ us - malay spoke

[[?]] - said he was a [[?]] advised to go to Muntock - left us

Had a cigarette lay down & thought & thought & thought & finally made

up my mind - [[?]] decided to go on & get it over rather than

[[starve?]] back on the beach - carried out [[?]] [[?]]

[[?]] had a wash & general straightening up at stream -

walked through campon many faces at the window few smiling

mostly unsmiling - gone some distance joined by 2 malays & a few

[[?]] good Eng. - told us have to go to concentration camp - women

[[?]] there alright if one moment injured (slight sinking of bayonets)

told us Singapore had fallen & passed by ċ fruit stopped [[?]] &

get more [[hungatams]] notified them down - malay left us & raided

another bag to get a couple of bananas each - just passing

through another campon when sound of motor horn blowing

furiously automatically stepped to one side then ċ a sickening

shock realized the only ones driving around in wars would

be Japs - Car pulled up driven by Malay - 2 Japs jumped out one ċ

revolver other ċ rifle pointed same at us - lifted our hands - 

our pockets searched much chattering but didnt know a

word - the most disreputable of two spoke few words

in Eng. told to enter car one ċ rifle in back ċ us - some fish

& bananas on floor indicated we would like some - agreed

wolfed down several bananas - asked many questions [[?]]

going on Is - where were we going to - Nationality - [[?]]

why were we going to Muntock - drove along winding narrow

streets ċ much blowing of horn.

Carrot Pudding

1 lb carrots & suet 1 cup sug 1½ cups flour S ½ lb

raisins & currant 1 tsp cinnamon & nutmeg ½tsp

cloves 2 tsp b. powder - weigh carrots after peeling & grating

mix suet chopped fine ċ fruit then carrots add b powder

spices & flour sifted tog - steam 3½hrs - serve ċ wine

sauce - ½cup butter ¼cup wine 2 eggs 1 cup sug - cream

butter & sl beaten egg yolks add wine gradually beat in

sug & mix fold in whites (stiff) & chill.

Curried Shrimp for chocktail

1lb cooked shrimps cut finely & add 4 disp may ċ 2 tsp

curry powder add little S mix well before adding shrimps

serve on warm butter croutons. trim & cut white bread

to desired size dip in melter butter place on tray

in over & brown slowly.

Banana Chocolate

6-7 bans 5 sponge fingers ½ pt vanilla jelly small tins

ideal milk ½ tsp vanilla 1 oz castor sug, 1 oz choc 1 oz

shelled walnuts ½ oz gelatine ½ gill water 1 egg white - 

dissolve jelly in hot water making barely ½pt. leave

to get cold & pour this layer into wetted mold - set - 

peel & sl 2 bans & dip in jelly & arrange in base of 

mold - set - cover ċ jelly set - sep sponge fingers &

arrange lengthwise around tin standing on top of

jelly - grate choc & chop walnuts mash ban to make

½ pt pulp - turn out milk into basin & whist well

stir in mash ban choc walnut van sug dissolve

gelatine & stir into mixt when thickens fold in stiff

white - mixt into mold set. 

Sago Plum pud.

Soak 2 tbsp sago in cup milk over night then 1 cup breadcrumbs 

1 cup sultanas 1 cup currants & add peel & cinnamon

etc & 2 tbsp brown sug. keep fairly thick & add 1 beaten

egg - put ½tsp Carb. Soda in ½ eggcup hot water & mix

thoroughly altog & steam for 1½hrs - serve ċ brandy

sauce - 2 tbsp butter melt & whip then slowly add 1 tsp

brandy

 

Baked Ham & Pots

Thick sl raw ham sl onions thinly sl pots 1 tin tom breadcrumbs

& grated cheese - brown sug - spread ham ċ 

brown sugar & mustard cover ham ċ layer thinly sl onions

& thin pots pour over tin toms breadcrumbs & cheese

Bake for 1½ hrs in sl oven

Stuffed cabbage

1 firm cabbage 1 lb minced steak 1 cup soft breadcrumbs

1 small chopped onion 1 dsp dripping 1 dsp flour 1 tsp tom

sauce 1 tsp worc. sauce 1 egg ¼ tsp salt pinch p. - fry onion

in melted fat add flour then meat, sauces, s & p. cook

until meat changes colour then add beaten egg & crumbs

Remove hard stem from cabbage hollow out centre & scald

with boiling water. chop centre cabbage finely & add

to meat mixt pack meat finely into hollowed cabbage 

& tie in parchment paper or cloth - place 1½ cups water

1 tbsp good dripping & place cab in boil gently then

simmer for 45 mins serve in wedges ċ brown sauce

Morish Mold

¼ cup sug 1½ cups milk 2 tsp gelatine 2 eggs 1 tbsp peanut

butter 1/3 cup chopped dates ½ tsp vanilla 1/8 tsp S - add ¼ cup

Sug to 1½ cup milk sprinkle 1½ tsp gelatine on milk

stir over low heat until gelatine dissolves - pour

slowly on 2 beaten egg yolks - cook over low heat 

until mixt coats spoon blend ċ 1 tbsp peanut 

butter - cook - fold in dates & flavouring & stiffly beaten 

egg whites - pour into mould chill unmould & garnish

ċ dates.

Baked Cheese Sandwiches

Butter a lge baking dish cut crust from 6 sl bread & put

them in bottom of dish - sl ½ lb American (stripe) cheese

thin & place over bread - sprinkle ċ chopped green pepper

(¼ cup) 1 chopped celery (2 tbsp) cover ċ 6 remaining sl of bread

Beat 4 eggs add 11/2 cups milk & Seas. S & p. & pour

over bread let stand 1 hr bake 45 mins.

Beet Salad

6 med siz young beets 1 tbsp sug ½ tsp S 1 tbsp gelatine

1 tsp vinegar 1 tbsp lemon juice pepper if nec - clean & 

boil beet til tender - drain - saving water (2 cups of it)

to this hot beet juice add gelatine softened in 2 tbsp

cold water sug vinegar & seas - cook till begins to thicken

then pour over chopped beets - chill cut in cubes  serve ċ salad
