RECIPES (ORIENTAL) 13
CHOW TAO
1 ½ lb string beans ½ lb thinly sliced pork, teaspoon chopped raw
ginger, tablespoon fat, salt, pepper, soya sauce.
Break up beans 1 ½ " long & boil 10 minutes. Fry pork & ginger
till brown. Add to beans & cook for 15 minutes longer.
Serve with soya sauce.
NASI GORENG 5 cups cooked rice, 4 tablespoons cooking oil,
30 small red onions, 4 fresh red chillies, ½ lb blachan (or fish
paste) Pound blachan, chillies & onions together but not too
finely & fry for 10 min, stirring continuously. Add rice &
soya sauce to mixture and mix well. Cold meats ham,
prawns, liver, poultry, fish, tomatoes etc may be added.
MAH MEE Mince & fry 1 large onion in pork fat till half
done, then add cabbage, leek tops, celery, spinach & few
pieces bacon, 2 tablespoons flour, 2 tablespoons soya sauce.
a little grated ginger, 2 tablespoons worcester sauce mixed
in a little water. Cook until tender but not too quickly
as it will burn. Then add worcester sauce & mee (or
spagetti, macaroni or vermicelli) may also be added
pork, chicken etc (as for nasi goreng) Serve with garnished
fried onions & tomato sauce.
BALMI GORENG 3 chopped chillies ½ lb fatty pork chopped in
small pieces ½ lb lean meat in small minced balls, ½ lb
lettuce ½ lb butter, 2 eggs, ½ cup soya sauce, 1 ½ lb mee cakes
(from Chinese store) 1/4 lb onions, 1/4 lb prawns, 1/4 lb sliced
lobster, 2 tablespoons tomato sauce. Fry pork partly, add
chillies, meat balls, soya sauce & vegetable. Beat in eggs &
butter & onions & a little vinegar. Add salt & tablespoon
sugar. Meanwhile boil mee till soft, fry prawns & lobster
Mix whole lot & stir steadily until mee turns brown.
Add butter & tomato sauce. Serve with strips of
omellette & minced fried egg.
CHOW MIEN 1/3 cups chopped onions, ½ cup chopped celery
leaves, 3 tablespoons fat 4 cups chopped celery (in addition
to celery leaves) 2 cups bean sprouts drained ¼ cup flour
2 cups water, salt, pepper 3 tablespoons soya sauce, 2
cups cooked prawns or shrimps, 2 cups (1 tin) Chinese
noodles, 1 ½ cups shredded cooked chicken, 2 hard boiled eggs
(sliced). Fry onions & cellery leaves in fat until brown, add
celery & liquid from sprouts & simmer for 20 minutes. Stir
in flour mixed to smooth paste in water & cook till
thickened. Add salt pepper soya sauce, sprouts, prawns or
shrimps & simmer for further 15 minutes. Place noodles in
shallow pan & heat in moderate oven for 15 minutes stirring
occasionally. Serve chow mien over noodles & top with
chicken & egg
