water and boil. Draw

off and place in earthware

demijohn and allow 

to stand cloth-covered

and bottle - same precaution

(sugared to taste). Drinkable 

immediately.

& squeeze juice to barrel

and add to taste (roughly

even parts water & juice)

Sugar to taste added.

(use sparingly) Leave

out bung. Turn barrel

upside down each 3

weeks for 3 months (still

with bung out. Then leave

further 3mths turning twice.

Then bottle leaving

Appreciable space with loose

cork for few days & then

tighten cork and leave as

long as possible. (over)
